kaddu masala curry(Spicy Pumpkin Curry )Recipe:

Pumpkins are available almost through out the year and are rich source of Vitamin A and C.The recipe that I am sharing today is very simple yet delicious and I learned it from one of my Rajasthani friend,she used to cook it in ghee.I use oil instead of ghee but rest of the recipe is untouched.Hope you all will like it :)Enjoy!!!

kaddu masala curry(Spicy Pumpkin Curry ) Ingredients:

  • 250 grams pumpkin ,skin removed and cut in cubes.
  • 2 large onions chopped.
  • 1 tomato chopped.
  • 4 to 5 crushed garlic.
  • 1 tea spoon turmeric powder.
  • 1 1/2 tea spoon red chili powder.
  • 1 tea spoon cumin powder.
  • 1 1/2 tea spoon coriander powder.
  • 1/4 tea spoon garam masala powder.
  • 1 table spoon chopped coriander leaves.
  • salt.
  • oil.

kaddu masala curry(Spicy Pumpkin Curry ) Recipe:

  1. Heat oil in a pan and add the red chilies and fry them for 10 secs before adding the chopped onions.Saute the onions till they become soft.Add the chopped tomato and 
  2. Add the crushed garlic and fry for 10 secs.Add the chopped tomato and saute for 15 to 20 secs,now add the turmeric powder,cumin powder,coriander powder and fry till the oil separates from the spices.You might have to sprinkle little water so that the spices don't burn.
  3. Now add the pumpkin cubes and mix with the spices,add salt and 1 cup water and cook till the pumpkin become soft.Sprinkle garam masala powder and mix well.Remove from heat and garnish with coriander leaves.
  4. Serve hot with roti or rice.
